Belcampo Butchery is a 20,000 square foot facility located in Yreka, California. Our multi-species facility is certified organic by CCOF under USDA regulation as well as certified as a humane processing facility by Animal Welfare Approved. Our highly skilled butchers use traditional hand-cutting methods – this allows us to offer you more flexibility and greater opportunity for customization. Belcampo Butchery is also a one-stop shop for all of your cut and-wrap and Value Added Processing needs. Our capabilities allow us to work with both local farmers as well as larger retail brands.

Adam Knapp

General Manager Belcampo Butchery

Adam started his career as a butcher and then went on to work as plant manager at the renowned Chico State Meat Lab, a mid-sized, multi-species plant similar in scope to Belcampo Butchery. At Belcampo, he provides the highest level of care during the final stage of our animals’ lives and oversees every step in the production process. Adam likes to spend his time away from the Butchery out in nature hunting and fishing.

Janet Marquez

Operations Manager

A native Siskiyou County resident, Janet attended Cal Poly, San Luis Obispo, where she majored in Animal Science. At Belcampo, she oversees the daily operations of the plant and is also the liaison between the Belcampo Farms and Belcampo Meat Company. Janet works with the entire Butchery team to ensure a quality product is supplied to our customers. Janet enjoys exploring Siskiyou County with her husband and is an avid baseball fan.

Seth Crabtree

Vice President of Retail Products

Seth joined Belcampo with a restaurant industry background where working with high quality products taught him to appreciate everything that goes into bringing wholesome and delicious food products to market. Seth worked with Boccalone where he learned to make traditional Italian salumi using high quality pork. He then worked at the Local Butcher Shop in Berkeley, where he focused on a whole animal approach. While he appreciates every animal he works with, he has a special affinity for pigs, and the slow, time-honored practices that lead to the best possible cured meats.
